Ingredients:
- 1 pack of Eisberg Bolero Mix
- ½ green apple
- 1 baked beetroot
- 100 g goat cheese
- 2 tbsp walnuts (approx. 30 g)
- ¼ red onion
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- salt, pepper according to your taste
How to make a colourful and exciting dish:
Pour the mix into a bowl, stir in the thinly sliced red onion and chopped walnuts. Bake the beetroot, wrapped in aluminium foil, at 190-200°C for about 1 hour. Dice the baked beetroot and apple and add to the salad. Mix the dressing ingredients in a small bowl and pour over the salad. Crumble the goat’s cheese on top of the salad.
